FOOD FOR THE CULTURALLY CURIOUS

Street food is at the heart of Trinidadian, or Trini, culture. It accompanies Sunday morning breakfasts, errand runs through the market, winding drives to the beach, late nights of dancing, cold coconut water or a cold beer. It’s laid back, flavorful and ready to be paired with the adventure you’re already on.

Our signature dish and Trinidad’s national dish (pictured above) is doubles - a sweet, savory and juicy sandwich made of curried chana (or chickpeas) sandwiched between two fluffy bara (or fried bread) and dressed with an array of freshly made chutneys, like cucumber, coconut, mango, and tamarind. Doubles originate from Princes Town in Trinidad, the birthplace of my grandmother.
